Vegan Cheesy Kale Chips.

Justene and I are leaving for a month long human-powered expedition to the Cirque Of The Towers in the Wind River Mountains in Wyoming tomorrow morning!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Crazy stuuuff! Super Stoked!

It will take about a week to bicycle the 380 miles, then hike in, and CLIMB SOME ROCKS!!!!!

Here's what we made to make those nights with the mosquitos memorable.

Dehydrated:

  • Apples
  • Bananas
  • Fruit Leather - dates, bananas, maca root powder, spirulina, chia, flax meal, sesame seeds (yum)

Dehydrated Soup Mix:

  • Peas
  • Sugar Snap Peas
  • Kale
  • Onions
  • Garlic and garlic scapes
  • carrots 
  • radishes
  • green peppers
  • jalapeƱos
  • Sprouted quinoa
  • Sprouted lentils

Dehydrated spice mix:

  • Mustard greens
  • Basil
  • Oregano
  • Chives
  • Sage 
  • Cilantro
Dehydrated granola:
  • Sprouted Buckwheat
  • Sunflower seeds
  • Cranberries
  • Raisins
  • Coconut flakes
  • Cinnamon
  • Honey
  • Chia seeds
  • Hemp seeds
Note: All veggies came from our community garden!

  1. This is so awesome! Good luck you guys, and have fun! I have a few questions about some of your foodstuffs. First, what is maca root powder, and what is it used for? Second, what is spirulina, and what is it used for? Third, can you share your technique for the cheesy kale chips? I am always looking for more ways to prepare kale!
